Creamed corn (10/10): Corn is one of my favorite sides for bbq. Gives me the carbs I need to digest the meat without adding too much fat to the meal. And creamed corn is one of my favorite forms of corn. I used to love the creamed corn at Terry blacks but of late, it has started to taste like play doh. It tastes oddly synthetic, bordering on saccharine. Here at rolling smoke, the creamed corn was just the right amount of sweet. I perceived a hint of smoke, and overall I tasted nothing but good quality corn, tossed around in dairy awesomeness. This was stunning. Brisket (4/10): Unfortunately, the brisket was a huge letdown. I had high expectations since they were using prime brisket. The first red flag was the brisket not glistening in the sun. It was slightly tender, yet dry. The seasoning was minimal, barely perceptible. I tried salvaging it at home by adding extra salt, but that didn’t make things any better because there wasn’t much fatty juiciness to carry the flavor. There were just too many things wrong with this brisket. Pork ribs (5/10): The pork ribs were similarly under-seasoned. Nothing to write home about. And they certainly didn’t leave a memorable impression. Pork belly burnt ends (6/10): Unfortunately the pork belly burnt ends were an under-seasoned disaster too. Thankfully they had a decent amount of fat on them. So when I added some extra salt to the burnt ends at home they tasted delicious. All in all, the meat here at rolling smoke by itself would’ve resulted in a two star bbq experience. But the creamed corn was phenomenal, and the people were really sweet. ——@eddythefoodcritic
Don’t bother waiting in long lines, or worry about finding a parking spot downtown, the folks over at Rollin Smoke have some of the best BBQ in town. The pork ribs are hands down the best in the city and the brisket is a close second. Kyle and the fellas deliver top notch service and don’t forget there are several other amazing food trucks in the same park, so your better half has options too.
1st time in Austin and wanting a legit Texas barbecue experience. Settled on Rollin Smoke and was not disappointed! Everything was on point-great brisket, pulled pork, sausage, and one of the best pork spareribs ever! Oh, don’t forget the pork belly burnt ends-like meat candy! Friendly people and a fun food-truck park atmosphere.
